Culinary Corner: Asian Peanut Pasta
Bring a surprising twist to your pasta with this fun and vibrant Asian Peanut Sauce! It’s a perfect summer lunch or side dish!
7 oz fettuccine
1 tablespoon oil
15 oz canned chick peas
1 cup spinach leaves
1 carrot, shredded
Peanut Sauce:
2 tablespoons peanut butter
2 tablespoons mayonnaise
2 tablespoons hot water
1 tablespoon soy sauce
1 teaspoon sesame seeds
1/4 teaspoon rice wine vinegar
1/4 teaspoon sriracha
1/4 teaspoon sesame oil
1/4 teaspoon salt
Cook the fettuccine according to package instructions and set aside. Heat the oil in a pan over medium heat. Sauté the chicken peas until golden. Add in the spinach and carrots and sauté until the carrots are soft and the spinach is wilted. Toss the mixture with the pasta. Combine all the ingredients for the sauce in a medium container or a jar. Shake well until fully incorporated. Pour over the pasta and veggies and toss until everything is coated with the peanut sauce.
