Culinary Corner: Maple Barbecue Sweet Potato Fritters

A twist on the traditional Latkes!
1 large sweet potato
4 teaspoons flour
1 egg
1 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon black pepper
Oil for frying
1: Finely grate the sweet potato. Add the rest of the ingredients besides the oil and refrigerate the mixture for thirty minutes
2: Heat a pan with a quarter-inch of oil over medium heat. Once the oil is hot, scoop out about two tablespoons of the sweet potato mixture into the hot oil. Fry for three to five minutes each side. Eat with your favorite barbecue sauce!
