Culinary Corner: Soft Bite Cookies

These taste like the old-fashioned soft bite cookies that we all loved and are all saddened that they don’t taste the same anymore. This recipe is it!!

1 stick margarine, softened

1 cup light brown sugar

2 eggs

1 teaspoon vanilla extract

2.8 oz instant vanilla pudding

1 1/2 cups flour

1 teaspoon baking soda

Pinch of salt

1 cup chocolate chips

Flaky salt (optional)

1: Preheat oven to three hundred fifty degrees. Line two baking sheets with parchment paper and set aside

2: In a medium size bowl add the margarine and brown sugar. Beat until creamy

3: Add in the eggs and vanilla extract and mix until smooth

4: Continue by adding the dry ingredients (vanilla pudding, flour,baking soda, salt, and chocolate chips) beat just until fully incorporated 

5: Use an ice cream scoop to form round balls of dough. Place the dough on the lined baking sheets. Lightly sprinkle with flaky salt. Don’t overcrowd the pan. Bake for twelve to fifteen minutes. 

6: Completely cool the cookies, they will come out looking underdone but wait until it’s completely cool before you decide if you want to put it back in the oven or not
