Culinary Corner: Stuffed Peaches
A simple and tasty dessert to end off your summer meals! This can be made dairy or parve. Simply swap out the butter for a vegan butter or margarine and use parve vanilla ice cream.
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon vanilla sugar
1 teaspoon cinnamon
Vanilla ice cream
Rub the butter or margarine all over the surface of a large pan. Sprinkle the brown sugar, vanilla sugar, and cinnamon evenly over the butter.
Cut the peaches in half and use a small sharp knife to get the pits out of the peaches. Place skin side up in the pan. Wiggle it around a bit to soak up the flavors from the bottom.
Bake at four hundred degrees for fifteen minutes. Allow it to cool for five minutes before gently flipping over and adding a scoop of vanilla ice cream to each of the peach halves. Top with crushed walnuts and granola. Serve immediately.
