Culinary Corner: Beef Corn Tacos
Summer and tacos go hand in hand! It’s an easy dinner, especially when you are hosting! Set out empty taco shells and bowls of assorted toppings to have an interactive dinner where everyone builds their own tacos.
Ingredients:
8 soft tacos shells
1 lb beef stew
4 tablespoons oil
1 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/8 teaspoon black pepper
1 can corn
Chili Lime Aioli:
4 heaping tablespoons mayo
1/2 teaspoon lime juice
1/4 teaspoon salt
1/4 teaspoon chili powder
1/4 teaspoon sriracha
1/8 teaspoon garlic powder
Topping options:
Shredded corn
Shredded cabbage
Avocado
Jalapeño
Lemon/lime wedges
Directions:
Heat the oil in a large pan over medium-high heat. Sear the meat for three minutes per side. Add the seasoning and cover the pan. Cook over low heat for about an hour or until the meat is fork tender. If the chunks are too big, cut them into smaller pieces.
Combine all the ingredients for the aioli and mix until incorporated.
Char the tacos for a few seconds over an open flame. Fill with the beef mixture and top with the toppings of your choice.
