Culinary Corner: Sweet Potato Gnocchi

You will never go wrong with a good gnocchi recipe! If you don’t like gnocchi, serve the sauce over spiral noodles!


16 oz gnocchi
Handful of spinach 
1 sweet potato 
1/4 cup heavy cream 
1/4 cup parmesan cheese 
3/4 cup milk
2 teaspoons garlic
1 teaspoon salt 
1/8 teaspoon oregano
1/8 teaspoon black pepper 

1: Peel and dice the sweet potatoes and place in a small pot. Fill the pot with water and bring to a boil. Summer until potatoes are soft and then drain
2: Place everything besides the gnocchi and spinach in a blender and blend until smooth. If you want a thinner consistency add some more milk
3: Boil the gnocchi according to package instructions. Drain and mix with the sauce. When the when the gnocchi is still hot, add in a handful of spinach and mix until wilted. Top with more parmesan cheese
