Step #1: Lay half the cookies on parchment paper, flat side up.

Step #2: Put one scoop of ice cream onto each cookie.

Step #3: Take another cookie and put it on top of the scoop of ice cream, gently pushing down to make an ice cream sandwich

Step #4: Roll the sides of your ice cream sandwich in your favorite toppings such as chocolate chips or sprinkles. Eat and enjoy!
